Ingredients:
- avocado, 1 whole, diced
- tomato or cherry/grape tomatoes, diced whole tomato or halved cherry tomatoes, about 2 cups
- corn, 1 cup or can
- mint, few leaves chopped
- parsley, few sprigs chopped
- butter, 1 tablespoon
Ingredients for Dressing:
- hummus, 3 tablespoons
- maple syrup, 2 tablespoons
- lemon juice, 2 tablespoons
- salt and pepper to taste
Directions
Melt butter with corn and salt to taste. Add avocados and tomatoes. Adjust amount of each ingredient to personal taste.
Mix together ingredients for dressing. Adjust each ingredient accordingly.
Add dressing to salad and mix well or keep dressing on the side. Garnish with mint and parsley and serve.
