Spicy, sour, savoury, refreshing.
Ingredients:
- Soba noodles
For the dressing:
- 3 tbsp Sesame oil
- 1 tbsp Soy sauce
- 3 tbsp Rice wine vinegar
- 1 clove garlic, minced
- 1 tsp Siracha sauce
- a few tbsp Coriander, chopped
- ½ tsp Salt (or to taste)
- ½ tsp Sugar (or to taste)
- 1/8 cup Water
- Pinch of Toasted sesame seeds (garnish)
Directions:
Prepare the soba noodles. Boil/cook according to instructions on the package. Rinse thoroughly with cold water after boiling for a firm al dente texture. Set aside.
To make the sauce, mix all ingredients together until well blended. Use warm water to dissolve the sugar and salt to blend well into the sauce. Adjust the ingredients according to preferred taste.
Toss the noodles with the sauce to coat evenly. Best to serve noodles soon after dressing. Overtime the noodles will absorb the sauce.
Garnish the dressed noodles with a few sprigs of coriander and some sesame seeds.
Serve hot or cold.
